We have several ways of cooking and preparing food here in west African Nigeria and in view of this it makes a lot of differences throughout the world. And that is why it makes a lot of great impact into food processing with step-by-step method. Why it is called African food is because it is mainly produced as fresh as it is. And we have it in abundance here in West Africa Nigeria. I know that in some other part of the world it is also being consumed and transported into their country. Cassava flakes is very durable palatable and also consume by all ages. But it is also said that too much of it is not too good for the health.
- This is when the old grinding was done and I was very opportunity to go inside the factory itself. This is a very big gary factory and I was also shown some few processes how it is been done. The processes may be different from how it is being shown in this article but I can assure you that they are very similar to each other. When it is been grinded all the cassava paste will be packed as shown in the sack.
This is the one of the machine that is being used for grinding. Although I found out that there are 3 to 4 big machines that does the same thing. It Grinds the cassava tuber, when it is been next to the final process. Why I said this is because for every process in Garri making, which is also known as cassava flakes making, it must be physically sure so that so many people will gain one thing or the other practical.
After the grinding process then the packaging is next.
After the grinding, then the packing also goes in, its needs to be in a arranged format so that one after the other the sack will enter the Jack for two to three days. Then another set of sack will go again.
- After 3 days of pressing it with the Jack and extracting of the acid water in it. There comes the next process which is the sieving the already drained and dried raw cassava paste. Then you use the Seive as designed. We also have different type of sieve but you should know the best one to you.
You use your hand to press down the already grinded drained cassava so that it will come out quickly and it will be more smoother. For the final process again. Which is the frying of the already save cassava.
In as much as you have a very good processing routine, you should also know you need a separate big bowls to differentiate between the shaft and the real already Seive cassava.
- After the cassava might have gone under the Jack for 2 to 3 days of pressing out the acidic water. Then it goes into the next stage with also is the frying of the drained cassava flour, it's neat to undergo the Toro frying for couple of few minutes so that to become extremely dried. And it will be more palatable for long-term storage.
Afterwards, the person in charge will continue to fry until the last bit of the already Seive cassava. And there comes the final stage as well after the frying.
