Let's Prepare Boiled Plantain With Stir-fried Spinach.
The weekend is almost here and I'm excited. Well, not that I really have any special plans for the weekend or any event or owambe to attend like my dear friend @beckyroyal often does. 😂 I'm just going with the flow of the weekend vibes.
However, to start off the weekend, I made this delicious, satisfying and nutritious meal - boiled plantain with stir-fried spinach vegetables. I've got a thing for stir-fried vegetables lately. Lol.
As we all know, half-ripe plantains are nutritiously packed with essential vitamin like Vitamin C and minerals - magnesium, potassium, plus complex carbohydrates and fiber. Similarly, spinach vegetables are a great source of vitamins A, C, and K, iron, calcium and antioxidants.
Therefore, combining half-ripe plantain with stir-fried spinach creates a nutrient-dense meal. This meal is filling and satisfying due to complex carbs and fiber it contains. Plus, it aids in weight management, and provides essential nutrients for optimal body function.
That being said, let delve into preparation of this great meal.
Ingredients
3 sizeable plantains.
Spinach vegetables.
40ml vegetable oil.
1 sizeable onion bulb.
3 fresh tomatoes.
1 tablespoon of dry ground pepper.
½ tablespoon of dry ground ginger.
1 tbs of salt.
- Soy sauce.
- Water.
Steps
- First I washed the spinach leaves thoroughly and then put them in a sieve for easy draining of water. As you know, spinach contains water so you don't want to add more to it.
- Then, I washed the plantain, then proceeded to cutting them into small sizes without peeling off the skin. You can choose to peel off the skin, but I prefer it this way.
Now they're ready to cook. I added salt to taste.
Next is to prep other ingredients.
- I washed the onion and tomatoes, after which I diced them.
- After that, I cut the spinach leaves.
By now the plantain should have cooked, so I turned off the heat.
Next step is to prepare the veggies sauce
- I poured the vegetable oil into a dry pot and allowed to heat up for about 2 minutes.
- Onion went in first, and I stirred for some seconds.
- Ginger followed, then the ground pepper, stirred well for a minute.
- I added salt and then tomatoes, another minute stir.
- The flavorful soy sauce was on hand to add aroma and taste to the mixture. 😅 I actually added some good drops, though to my taste. I stirred well so all the ingredients can mix well. Here, you can give it a taste to know if you'd add either more salt, pepper or soy sauce. The taste was just okay for me.
- I then added the spinach, gave it another good stir for about 3 minutes and then turned off the heat. The sauce is ready.
- I drained the water from the cooked plantain, peeled off the skin, and then served the food in my favorite plate - hot and fresh.
The meal served as my lunch and I relished the flavored taste in every bite. 😋 In fact, I ate to my fill.
