Field To Fork: Plant, Harvest And Eat!
Seasons greeting everyone. Hope you are enjoying the yuletide. I'm delighted to participate in this contest. I got to know about this contest through @jurich60's post. I hope my entry will be accepted.
I grew up in a family where farming was the mainstay. Every planting season, my parents will get portions of land on lease and we would grow all kinds of crops like vegetables like okra, pumpkin (ugu), waterleaf, spinach, fruits like pawpaw, pear, guava, banana etc, including plantain, potato, cassava, yam etc.
I can't remember a time when we bought any of of these because they were grown in our farms. We not only harvested these crops and fruits for family use, we also sold some for money.
Leaving home, I still carried on with farming, although not in large scale like we did way back home. I have just a little space in my compound where I often plant few crops - vegetables (ugu), okra, tomato including corn, fruits etc.
I love gardening because of its numerous benefits. Not only am I exercising when carrying gardening, I also get to enjoy fruits and vegetables fresh from the garden. That's eating healthy foods. I also save some cents. 😅
Having said that, let me delve into the Asean Hive Challenge #137 "Farm To Table"
The first one I'd be sharing with you is the spinach vegetable. I was gifted some spinach and after using it, I planted the stems. I was delighted to see that they survived and flourished.
This spinach always come in handy whenever I want to prepare vegetable sauce for rice, yam, beans or fries.
Here, I prepared spinach veggies sauce and used it to garnish the beans. Doesn't it look appetizing? 😋
I was craving rice with veggies so I prepared the vegetable stew using spinach and tomato. I also garnished it with cucumber. All these are from my garden. Very nutritious and delicious too. Ah, life is good, lol.
Here's the cucumber in the garden
And the tomatoes 😅. I wasn't really expecting to see these tomatoes grow.
The thing is that I bought some dry tomatoes, and while washing it, I added salt in the water, after which I poured the water which contained tomato seeds in my garden. I had doubts about them germinating but it was surprising that after some days, they cleared my doubt, hahaha.
See how fresh they look.
Another one is pumpkin vegetable (ugu). Can you see how they're flourishing. It gives me great joy to see my crops flourish and equally yield well.
Pumpkin (ugu) is a popular vegetable in my region and it's used to prepare various native soups.
This one is vegetable soup - a combination of pumpkin leaf and waterleaf.
This soup is native of the Akwa Ibom and Cross River, in Nigeria, and it's called "Mmo Mmo Ikong".
I served it with a type of swallow called "garri", made from cassava.
Here we have paw paw. This is one of my favorite fruits and I always ensure to plant it. I can eat it just like that or make fruit salad or simple smoothie with it.
I used - pawpaw, banana, groundnuts, watermelon, apple and greek yogurt. Blended all, and here's the result.
I kept in the refrigerator and enjoyed it afterwards. I tell you, it was so tasty.
There's also okra.
Hmmm, I love fresh okra soup. I added pumpkin leaf to it, to give it that all "veggie vibe", lol.
That's all I've got to share with you. Hope you enjoyed reading the content. Let me know the food you like most. Thank you.
Oh, before I forget;
Have a very merry Christmas!
