Miki Noodles Soup: Every llocano Loves to Eat Whether the Weather Is Hot or Cold
Hello, how are you? I saw a post on Facebook that Filipinos crave soupy food whenever the weather is rainy, which I can tell you, they're right! LOL, my brother craves "Miki," which is understandable.
With this kind of weather, who doesn't like to eat homemade hot miki, which is the easiest food to make, and the perfect time we still have Chili Oil I made last week, "chef kiss". The weather makes you not sweat much.
What soupy food do you crave when the weather is rainy? I have a lot in mind, of course, Miki is one of them, but I like sopas a lot too.
Ingredients and Prepping:

- 500g Meat
- 1 tbsp. Cooking Oil
- 1 Bulb of Garlic
- 2 Red Onion
- 1 Stock of Celery
- 6 tbsp. Fish Sauce
- 3 Litre of Water
- 3 Chicken Broth Cubes
- 1 tsp. Ground Pepper
- 1 pack All-in-one Seasoning
- 2 pack of Ground Annato Seed
- 1/2 kilo of Miki Noodles
- 2 tbsp. Margarine
Cooking Time:
In a hot pot, I added about 2 tablespoons of water, and then after that, I added the meat I am going to use, which is pork. We don't have chicken at the moment, so any meat is okay. I do this to cook the meat more.
When the water is completely evaporated, I added 1 tablespoon of cooking oil.
I cook the meat until it turns brown and crispy.
Next, I am going to add the garlic, red onion, and celery. Celery makes the Miki taste and smell good. So I suggest you need celery for this recipe.
Because this food is soupy, I added about 6 tablespoons of fish sauce. If it's still not tasty enough, add a little bit by little bit.
Then I added water, preferrable hot water if you wanted to cook the food early.
I added about 3 liters or more of water. After that, I added 2 to 3 chicken broth cubes to add more flavor to the soup.
After that, I added a teaspoon of ground pepper. This adds spice to the soup.
After that, I added this whole pack of all-in-one seasoning. We love flavor in this house. LOL.
Wait for it to boil by closing the lid.
To make the food more pleasing to the eye to eat, I am going to add color to it by using ground annato seed. What I do is I add hot water from the pot into a mini bowl.
Mix it until well combined and then pour it into a strainer into the pot.
The soup should look like this, vibrant yellow and orange. Now it is good to look at.
When the soup starts boiling, I am going to add the noodles. What I do is to add them little by little to separate the noodles, which are like crumbled noodles.
After adding all the noodles in I mix them to avoid noodles from sticking to each other.
We like the noodle kind of al dente style with a little bit of hardness, so I just cook the noodles for about 5 to 7 minutes.
For the final touch, I added about 2 tablespoons of this margarine, and then just mixed it until well combined, and we are ready to eat.
Adding Chili Garlic makes it 100% taste better! Happy Eating!
