Ginisang Munggo at Bunga ng Malunggay (Moringa Pods)
Hello, how are you? It is the months of Malunggay Pods to be harvested, and it has grown a lot, I mean a lot, and it is a blessing for us, having the opportunity just to harvest whenever you like, If we don't have food for the day my father would go and harvest on our front yard.
For our lunch, I decided to cook Ginisang Munggo with Malunggay Pods, yes, you can add malunggay pods to ginisang munggo. When I was still new to cooking, my mother told me I could add it to the dish, and I was like Wow, that is a good idea and since we have a lot of it here, I added it as a filler to the dish. You can add the leaves too, but I forgot LOL.
Ingredients I Used and Prepping:
- 1 cup Mung Beans
- 8 cups Boiling Water
- 1 chicken broth cube
- 2 tbsp Cooking Oil
- Half cup Chicken
- 5 garlic cloves
- 1 Red Onion
- 1 Ginger
- 4 tomatoes
- 1 tbsp Fish Sauce
- Half tsp Ground Pepper
- 5 Malunggay Pods
Let's Cook!
Boiling The Mung Bean To Remove The Skin:
Then I added hot boiling water just enough to boil the mung bean to remove the skin.
Let the water boil until the skin separates from the mung beans.
Now, almost all the mung bean skins are separated, and it's good.
Back to the sink, I let the water run so all the mung bean skins wash off. I did it a couple of times until almost all the skin was off.
Now, back to the stove.
I added 6 cups of boiling water to the peeled mung beans.
While the munggo bean started to boil, I added 1 cube of chicken broth.
Saute Time:
In a hot pan, I added 2 tablespoons of cooking oil.
After that, I added the meat and let it cook until it turned brown.
Then I added the aromatics like garlic, red onion, and ginger, let it cook for one minute or until the aroma comes out.
After that, I added the cut tomatoes and let them cook until soft.
When the tomatoes are soft enough, I add about 1 tbsp of fish sauce.
Let the fish sauce seep into it.
After that, I added 1 teaspoon of ground pepper.
Adding the Sauteed Ingredients To The Mungbean:
After that, I transferred it to the pot where the mung beans were.
Let it simmer for about 10 minutes or until it nearly thickens.
After Simmering:
After 10 minutes, I added the Malunggay Pods and let them cook for about 7 minutes or until cooked.
This is what it should look like. Ready to be plated.
Happy Eating, everybody!

Mongo! My all time favorite! Even if no meat in it, it's so delicious for me. Takes me back to my childhood memories, were my parents can only afford this viand, it's cheap and nutritious too.
