Ginataang Kalabasa at Sitaw (Squash and Long String Beans Cooked with Coconut Milk)

Hello! How are you? I was browsing my feeds when I saw that the ASEAN Community posted a weekly challenge about "ASEAN Chef: Coconuts," which caught my eye. It's good timing that I have an entry. This is my first time joining their challenge. For my entry, I will show you how I cook the savory coconut Squash and String Beans cooked with coconut milk. We called this dish Ginataang Kalabas and sitaw in tagalog this recipe is so easy to cook only took me half an hour to prepare and cook.

Honestly, when I was a kid I was not into food with coconut milk in it I didn't know as a little bean that her food pallet was still not exploring everything Filipino food, I understand but now that I am an adult that those foods I don't like before are what my mouth and stomach cravings now. LOL


Prepping the Veggies:

I started by cutting the string beans. Here in the Philippines, they pack string beans with elastic bands, which is a smart idea because it makes them easy to cut. I trimmed the ends of the beans and then cut them into pieces about 3 inches long, just by eyeing it to what I wanted.

First, I cut off the top and bottom of the squash to get rid of the sticky stuff, which I don’t like because it stays on my hands all day! LOL Then, I cut the squash in half and then cut each half again, making 4 pieces. Next, I used a spoon to scoop out the seeds. After that, I peeled the skin off and cut the squash into small pieces.


Ingredients I Used:

  • 1 tbsp of cooking oil
  • 1 slice of pork chop
  • 4 cloves of garlic
  • 1 medium red onion
  • 1 medium size ginger
  • 1 tbsp. of fish sauce
  • 1 knorr chicken cube
  • 1 tso of crush pepper
  • 1 cup of coconut milk
  • 2 cups of water
  • 1 medium squash
  • 1 band of string beans

Lets Cook!

I first put a tablespoon of cooking into the hot pan.

And then I carefully put in the slice of meat.

I cook the meat until it turns brown and crispy.

Now for the aromatics, I sautee them for a minute until fragrance.

I keep mixing them so that the aromatics cook equally.

Now that the aromatics are sauteed, I then pour in 1 tablespoon of fish sauce.

To make the food more delicious I added 1 knorr chicken cube.

After that, I added a teaspoon of crushed pepper.

Now for the main ingredients, I used mama coco as my coconut milk I added 1 cup of coconut milk.

Now that the coconut milk is added, I add 2 cups of water.

After pouring the water I then stir. I let it boil.

Once it boiled, I added in the long string beans first.

Next, I added in the squash. Now that the veggies are all in it is ready to be cooked.

Next, I put the lid on and let the veggies cook for 5 minutes or until softened.

And then I transfer it to a serving plate. Happy eating!

ahh pangasinense 😮😮 that's so cool. so much yummy dried fish in your area 🥹 and I'm kind of on a diet so i can't indulge in that much gata for now

magulam ka din minsan ng isda, kami din dito yun lang kasi ang pinakamura na karne hahaha pero manok na iba iba ang luto XD

squash with coconut milk is so much tastier . I’d love to have extra rice for that recipe at the same time gives it a healthy amount of nutrition. Vegetable is my favorite of all foods.

That's so yum yum, kalabasa is really good when cooked with gata. I super love it with eggplant din.m, and of course sitaw. Sarap nito ulaman ng tuyo, mapapadami ng rice talaga 🤤🤤✨

we do have same recipe heheh , really delicious and nutritious , My mom also loves to cook that , sometimes she taught me of how to cook that but i dont have interested heheh , I just love eating than cooking ahaha .

Aww kakamiss tong ulam na to. For this food i use ground pork. XD tsaka medyo may phobia pa ako sa ulam na to, parang na food poison yata ako kasi sira na ung sitaw na nahalo ko. 🤦🏻‍♀️🤦🏻‍♀️ kaya di muna ako nagluluto rin ng may gata kasi naaalala ko pa yung nangyari saken. Hahahaha 🤦🏻‍♀️🤦🏻‍♀️

This is the kind of meal we always prepare at home but with raw coconut which we need to crush and squeeze for its milk. I love it!

This is one of my favorite dishes, but I’ve never learned how to make it myself. I’ve always enjoyed it when others prepare it, but I don’t know the recipe or the proper way to cook it.
