Cooking Blog: Pork Adobo With Lots of Potatoes

Hello, how are you? Nothing's gonna beat the comfort adobo brings to me whenever I eat one of them, if it's cooked with chicken or pork still the best. I love it when the sauce is kind of thick and "mamantika," you know, when you cook it right, when the sauce is kind of "mamantika" and the savory flavor!

And one thing is adding bell pepper made it taste better, like better, I don't know,w some people add the bell pepper as a garnish, they just add it when the meat is finally cooke,d which is weird for me because since I discovered that it makes the flavor taste better, I started adding the bell pepper as the meat cooks and it melts.

Another thing to make the adobo taste better, frying the potatoes is a game changer for me, there is no time I will not fry the potatoes, it is a need to do whenever I cook food with potatoes in it.



Ingredients and Prepping:

  • Half Kilo Pork Meat
  • 4 Potatoes
  • 1 Bell Pepper
  • 2 Red Onion
  • 1 Bulb Garlic
  • 4 Tbsp. Soy Sauce
  • 1 Tbsp. White Vinegar
  • 6 Cups Water
  • Half Cup Cooking Oil
  • 1/2 Tsp. Ground Pepper
  • 1/2 Tsp. Chili Flakes
  • 3 Laurel Leaves
  • 1 Tbsp. Brown Sugar
  • Tsp. All-in-one Seasoning


Let's Cook!

In a hot pan, I added half a cup of cooking oil.

And then I added the chopped potatoes.

Let the potatoes be fried, do not touch them because it is still fresh and they stick to the pan when the part starts browning, that is the time you allow to flip the potatoes and it is not sticky anymore. Set it aside for later.

In the same pan, I added the cut pork into the pan and fried both sides until brown spots started appearing. I set it aside for later.

After that, I reduced the cooking oil and left about a tablespoon, and then I added the aromatics like garlic and onion, and I added the bell pepper too. Mix them until the aroma comes out.

After that, I added the pork I had fried earlier and mixed it until well combined.

Next, I am going to use about 4 tablespoons of soy sauce.

Then I added half a teaspoon of ground pepper, chili flakes, and 3 laurel leaves.

After that, I added a tablespoon of white vinegar.

And then a teaspoon of all-in-one seasoning, which makes the food taste better.

Then, to balance the taste, I added 1 tablespoon of brown sugar.

Then I added 6 cups of water.

Let it cook for about 20-30 minutes or until just a cup of water is left, but check it time to time. If the meat is still not tender enough, add more water to it.

Then, after that, I added the fried potatoes from earlier and cooked them for about 5 minutes.

Check the texture of the potatoes, and when it is tender, it means they are okay.

Serve hot and plated! Happy eating!
