COOKING BLOG: Filipino Style Baked Macaroni with Cheesy Sauce!

Hello, how are you? It has been a while! I took a break for me to clear my mind and soul LOL. I think it gets a little better. Wish me luck, hehe. So, for today's food, I am going to show you how I cook and bake mac Filipino style, which means it is completely different from the usual baked mac.

So when we are done eating spaghetti pasta, this is one of the second choices in our list. Sometimes, I like this better than the pasta, but this baked mac takes more time to cook, and it's worth it, though.

I can't remember if my cousin or my brother suggested trying this, so whenever we have occasion and I have the time to make it, I will do this.



Ingredients I Used:

  • 4 Litres Water
  • 500g Macaroni
  • 1 tbsp. Salt
  • 1 tbsp. Cooking Oil
  • 500g Ground Beef
  • 7 Hotdog
  • 3 tbsp. Butter
  • 4 Red Onion
  • 2 Bulb Garlic
  • 100g Pieces Mushrooms
  • 1 tsp. Ground Pepper
  • 2 Laurel Leaves
  • 1 tsp. Dried Parsley
  • 1 tsp. Chili Flakes
  • 1kg Italian Style Spaghetti Sauce
  • 1 tbsp. Fish Sauce
  • 1 tsp. All-in-one Seasoning
  • 1 tbsp. Brown Sugar
  • 2 cups Cheese
  • 250ml All Purpose Cream


Let's Cook!


Cooking the Pasta:

In a pot, I boil about 2-4 litres of water.

And then I season the water with 1 tablespoon of salt and 1 tablespoon of cooking oil. And I am going to add this macaroni.

I cook it to about al dente because it will continue to cook when I bake it later.

Then I let the water run into the strainer and strain all the macaroni, making sure to rinse it until it cools down, so that the macaroni stops cooking.

I set it aside for later.


Cooking The Sauce:

In a hot pot, I added the ground beef, no need to add oil because the beef itself is the oil.

Just keep mushing the meat until it gets cooked.

When the beef is cooked, remove it from the pot and set it aside. Do not remove the oil because I need it for the next step.

And then in the same pot and oil from beef, I am going to add the hot dog.

Cook it until browning starts appearing. Set aside for later.

In the same pot, I reduced the oil, and then I added a tablespoon of butter.

Then I added the minced garlic and red onion and let it cook until the aroma came out.

After that, I added the mushroom and cooked it for about a minute.

And then I added the ground beef I had cooked earlier.

After that, I added about a tsp of ground pepper, dried parsley, and chili flakes, and then I added 2 pcs of laurel leaves.

Then I added the spaghetti sauce in.

Then I added a tablespoon of fish sauce,

Then, a tablespoon of all-in-one seasoning.

To balance the taste, I added a tablespoon of brown sugar.

I added the hotdogs I cooked earlier.

And I let the sauce simmer at a very low heat for about 20 minutes.


Combining the Pasta and Sauce:

Cooking the cheese sauce toppings:

In a bowl, I grate about 2 cups of cheese, the more the better LOL.

In a mini pot, I added about 2 tablespoons of butter.

Then I added all the all-purpose cream.

Mix it all until well combined.

Then I added just a little water, half of the packaging of the all-purpose cream.

Then I added the cheese I had grated earlier. Let it cook on a low heat.

Cook it until the cheese is completely melted.

You know when the cheese is completely cooked when there is not a crumb of cheese on the fork.




Adding The Sauce:

In a 12-inch rectangular pan, I added the macaroni spaghetti, just half of it.

Then I added the cheese sauce just enough to cover the macaroni.

And then I added the left half of macaroni spaghetti, making sure to flatten it just like I did in the photo.

Then I added all the remaining cheese sauce.


Baking Time:

Preheat the oven to about 190 °C and then bake the macaroni spaghetti for about 15 to 20 minutes. 5 minutes before the timer goes off, set the setting to broil mode to make the cheese sauce toppings brown.

Let the baked macaroni cool off for about half an hour before eating, because it will set the cheese and make it more delicious.
