Cooking Blog: Chicken Afritada For Our Dinner

Hello, how are you? So whenever I cook chicken, they always request me to cook adobo, but this time I am the one who will decide what recipe I am going to cook. LOL

So I decided I am going to cook Chicken Afritada to change the food too, and I miss eating this, maybe the last time I tasted it was last year, so yeah, cravings satisfied again hehe.



Ingredients I Used:

  • 6 Potatoes
  • 6 Saba
  • 1 stalk of Celery
  • 1 Bell Pepper
  • 1 Carrots
  • 6 Cloves of Garlic
  • 1 Red Onion
  • 1 Ginger
  • 1 tbsp of brown sugar
  • 250g of Tomato Sauce
  • 2 tbsp of Tomato Paste
  • 1 tbsp of Fish Sauce
  • 1 tsp of all in one seasoning
  • 1/4 tsp of ground pepper
  • Half Kilo of Chicken
  • Half Cup Cooking Oil
  • 1 tbsp of cheese
  • 3 cups of water


Let's Cook!

I added about a half cup of cooking oil to a pan.

And then I added the potatoes and fried them until crispy.

And then I next I added the carrots in too and then fry it too until the texture is crispy.

This is what it looks like, and then I set them aside for later use.

Then I added the saba and fried it too until browning started appearing, and then set it aside for later too.

Before I added the chicken into the pan, I reduced the oil and left about just a tablespoon of it. After that, I added the chicken and cooked it until it changed color and browning started appearing.

And then I added the aromatics like garlic, red onion, and ginger, and I added the celery and bell pepper too, and let it cook until the aromatics come out.

Then I added 1/4 teaspoon of ground pepper for spice.

And then to make it tastier, I added a tablespoon of fish sauce and let the fish sauce seep into the chicken for about 10 seconds.

And then I put in 2 tablespoons of tomato paste and 250g of Tomato Sauce.

Mix them until well combined.

And then I added about 3 cups of hot water to the pan.

I added about a tablespoon of brown sugar to balance the flavor.

To add more flavor to the food, I added about a teaspoon of all-in-one seasoning.

After that, I added about a tablespoon of cheese. And then let it cook for about 15 minutes on medium heat.

After 15 minutes, I added the potatoes and carrots, cook it for about 5 minutes.

After 5 minutes, I added the saba last and just cooked it for about 1 minute only, and done!
