Classic Chicken Adobo Is Always the Best

Hello! How are you? Classic Chicken Adobo is something that I always cook whenever veggies are expensive or we don't have any in our refrigerator. And we love to cook it during an outing or a trip, eating with our hands is something that we always do whenever we eat this, and "mapaparami ka talaga ng kanin" LOL.

When I was still learning or watching my mom cook, I always wondered why they add vinegar (especially the white vinegar) to it, would it taste sour after that? Now I know why it makes the dish taste more savory and balances it. I love how innocent and naive I was back then, but now I am the cook of the house, and these condiments are really incredible.



Ingredients I Used:

  • 2 tbsp cooking oil
  • Kilo of chicken thigh and legs
  • half tsp of Rock salt and ground pepper
  • 2 cups of water
  • 5 cloves of Galic
  • 3 red onion
  • 4 red chilis
  • tsp of whole pepper
  • 5 laurel leaves
  • 2 tbsp soy sauce
  • 1 chicken broth cube
  • 1 tbsp of white vinegar
  • half tsp all-in-1 seasoning
  • 1 tsp brown sugar


Cooking Time!

In a hot pan, I added about 2 tbsp of cooking oil. (I used coconut oil)

Next, I am going to cook the chicken. I used the thigh and legs. I love using this part of the chicken, it is the best for adobo.

Next is I am going to add a half tsp of salt and ground pepper.

I let the chicken cook until brown and crispy spots start appearing on it. Trust me, the chicken will taste better if you do that.

Next is I added the aromatics like garlic, red onion, and I added the 4 chilis too.

Next is I added a tsp of whole pepper.

Then I added 5 laurel leaves to add a little flavor and aroma to the adobo.

Next is I added about 2 tbsp of soy sauce.

I let the soy sauce seep into the chicken before I added water.

Next, I added about 2 cups of water and 1 chicken broth cube.

Next is I added 1 tbsp of white vinegar.

Next, I added about half a tsp of all-in-one seasoning.

Then, after that, I added about 1 tsp of brown sugar, which balances the flavor of the adobo.

I close the lid and let it cook until the water has mostly dissolved. By the way, I cook it on medium heat.

You know it's ready when the sauce is thick. Ready to be plated.

Yumm! We always have a chicken recipe whenever we don't have viands. And chicken adobo is one of the menu we usually do with the chicken.

Yummy chicken adobo, it's also everyone's favorite. We also sometimes add boiled eggs and potatoes. Silver Swan soy sauce and vinegar are trusted brands; they are suitable for making dishes like this. This one also gets tastier after a day.

Thank you, yeah I add egg and potatoes too, even I add carrot and bell pepper. That is true I love using those two.

Adobo is one of the easiest dishes to prepare when you're in a hurry. It's a beloved staple among Filipinos and absolutely delicious! Personally, I prefer using chicken breast when I cook adobo, but the kids enjoy the leg pieces, so I add some of those as well. It's so good! I'm proud to be Filipino.

That is true, it is the easiest one to cook when you're in a hurry. Yes, you can use whenever part of the chicken, yeah leg part is the most go-to part of the chicken for adobo, yes, just to balance. :D

Another yummy viand for today. One of my favorites...much!😘

In cooking adobo, whether it's pork or chicken, I do not add magic Sarap or chicken or pork cubes because it's prohibited for a person who only has one kidney. I am conscious of the foods I eat. I always go for natural cum organic and processed foods are also a No, No! But I do have cheat days when crave delicious viands...☺️ Shhh..my Buddy who is a doctor is monitoring my food intake but I have my way of sneaking from his "los ojos grande"🤣🤣🤣

Thanks, dear, but I do not eat viands with MSG. I just put so many spices instead of MSG. It's so yummy!

What distinguishes adobo is its adaptability. You may make it more garlicky, acidic, or sweet to your liking, and every Filipino family appears to have their own version. It's also great for leftovers because the flavour improves the next day! Yummy🤤🤤🤤
