Easy food my wife cooks from chemical free vegetables from the home garden, Red curry with pickled bamboo shoots and chicken.
Hello everyone. How are you today? I hope all is well with you and your family. Several days ago my wife harvested bamboo shoots from the longan orchard area. Our longan orchard is about 600 meters from the house. We walked to the longan orchard early in the morning after dropping our son and granddaughter to at school. Although these bamboo shoots are small. But it can be an ingredient for our delicious dishes. My wife intended to cook a red curry with pickled bamboo shoots and chicken.
When she harvests bamboo shoots. She peeled and chopped bamboo shoots. And pickled the bamboo shoots with water and salt in a plastic bag for about 2 - 3 days. Then my wife took pickled bamboo shoots to cook.
This red curry with pickled bamboo shoots and chicken also has other vegetables as ingredients including : coriander, spring onion, culantro, kaffir lime leaves and hyacinth bean. But these vegetables my wife picked from the home garden.

Ingredients for red curry with pickled bamboo shoots and chicken.
- pickled bamboo shoots
- coriander
- spring onion
- culantro
- hyacinth bean
- kaffir lime leaves
- chicken
- shrimp paste
- shallots
- garlic
- dried chilli
- pork flavour seasoning powder
- oil
Crush the shallots, garlic, dried chilli and shrimp paste using a pestle and mortar to make curry paste for red curry.
Cut the chicken and all the vegetables.
Put the pot on the stove and heat the oil. Then add the curry paste to the pot and stir-fry until the curry paste is cooked and fragrant.
Then add the chicken in the pot and stir-fry the chicken with curry paste until the chicken is cooked.
Add water in the pot and boil until the water is boiling. When the water boils, add the pickled bamboo shoots in the pot.
Boil for about 20 minutes until the pickled bamboo shoots begin to cooked. Then add coriander, spring onions and culantro in the pot.
Boil for a while and add the hyacinth bean in the pot.
Season with pork flavour seasoning powder. Boil until the hyacinth bean are cooked. Turn off the stove.

How convenient it is to harvest bamboo shoot. Your walk to the orchard to harvest bamboo shoot was a good way to exercise too. The ingredients are different from our bamboo shoot dish here but its just stir fry usually. I think your way is healthier because it has more natural ingredients. I would love to have this when the weather is cool.

It's so nice to just pick vegetables from your own garden to add to your meals. It saves costs, plus it's organic. Even the curry paste is homemade. How delicious the dish you cooked is!
