Banana with coconut milk

Bananas are a popular fruit here in Philippines. It can be found almost in every places. You can see a lot of them in fruit stands, markets and supermarkets. You can grow banana in your farm, garden and even in your backyard.

Bananas are one of my late father's most common fruit in his garden or farm. We were able to live because of it. We used to have it for snacks and even for our dinner when I was still a child. My parents are harvesting banana, wait until they are ripe and they will cook banana cue out of it and seel it to the school or around our Barangay.

Banana specifically Saba or cardava can be eaten raw or can be cooked in different recipes.

One afternoon, my brother in law gave us banana. We are thankful for that blessing. Early in the morning, we checked it out so we could eat it but to our surprised the banana is now over riped. You will know that it is already over riped because it's peel starting to have black color in it.

We have available coconut and we decided to cook BANANA WITH COCONUT MILK.

If you want to cook a recipe like this, here are the ingredients:

Banana
Coconut milk
Salt
Brown sugar
Water

The ingredients are so simple and can be found easily, right? How about to cook it? It is so easy too.

Here are the procedure of cooking Banana with coconut milk:

Step 1. Peel and then slice the banana according to your desired shape. You can slice it crosswise or slanting. In our case we slice it slanting. You can also cook it unsliced. Set it aside.

Step 2. Cut and grate the coconut so we could get coconut milk later. We just used manual coconut grater. Do you have a coconut grater like that? You can't start grating until you will sit on it.

Step 3. When you're done grating you can now proceed removing the pure coconut milk or the thick coconut milk. We never put water in it, just pressing the pure coconut milk.

Set aside the pure coconut milk because we will use it later in the last process of cooking .

Step 4. Put one to two cups of water in the grated coconut meat we previously used. Get it's milk and use it as water for our sliced banana.

Step 5. Add a little salt as taste equalizer. We used to add a little salt to every recipe that uses more sugar.

Step 6. Add brown sugar according to your desired sweetness. Since bananas are already sweet we just add one full tablespoon of brown sugar. You can add more if you want it sweeter.

Step 6. Cook it in a medium heat until the water is absorbed by the banana and the banana will become tender.

Step 7. Lastly, add the thick or pure coconut milk. Let it boil and then our banana with coconut milk is ready to serve.

You can eat it for snacks or as dessert. It is a simple banana recipe yet so healthy and yummy.
