Red Bean Porridge on a Rainy Sunday

Yesterday, Sunday on our end, was a lazy rainy day. I honestly wasn’t even excited to open the shop. Weather like this just makes me want to curl up in bed, hug my pillows, and stay under the blanket. After all, it was Sunday. Still, we managed to open the shop around noon.

Rainy days like this are also perfect for enjoying hot dishes. In the Philippines, we usually cook warm delicacies during the rainy season.

We were happy when Mom prepared something special for our siesta. She made totong, a rice porridge cooked in coconut milk with red beans.

While Mom was busy with the totong, I experimented with a snack using the 8-in-1 sandwich maker I recently bought. I don’t even know what to call it. I just used the cookie-shaped plate of the sandwich maker.

I mixed coconut flakes, pancake flour, water, and sugar. For the filling, I added chocolate and cheese. The result was amazing. It tasted like soft cookies with a taste of puto or rice cake. I even thought about adding it to our shop’s menu, maybe with different fillings.

When everything was ready, I made a cup of hot chocolate using unsweetened cocoa powder. The taste was so comforting, and it paired perfectly with the totong and my newly discovered snack.

Yes I’m in the Philippines and it’s super rainy here in our province. Classes and work are suspended today due to heavy rains.

Agree! Hehe especially if weekends or if you’re on work at home. No need to go outside but unluckily I am not so I need to go outside to work. We have floods here in our area so most likely our governor or lgu suspends class and work.

Oh how I missed eating tinutong, totong lang tawag sa inyo ? And nice, nagamit mo na yang sandwich maker mo madam. And is it possible kaya to make flying saucer in there? Maganda atang business yon madam, buns lang tas bahala kana sa fillings. Pero the best spicy tuna or chicken sa ganon.

I watched the video before reading the rest of the post, and I can tell you that you conveyed exactly what you wanted to. Without even realising it, I felt that laziness, that slow pace of rainy days, and I felt the pleasant warmth of those freshly made delicacies. I didn't know what totong was, but it's very similar to another dessert we have here, which is also made with rice and milk, preferably cow's milk. Your sandwiches look amazing! I would love to try them. 😋

The video puts me into a mood of cozying up with a real paperback book.
I've been baking more regularly for my son's lately, even though they are adults now.
I can almost smell th ebaking.
If only someone develops digital smell app for PeakD.

That'll be a very good app. Sometimes when reading recipe articles here on Hive, I wanted to smell and taste those recipes haha.
I wish we have a big oven. I truly want to pursue baking.
