I’m doing good i hope you all doing fab and wanna let you know that It’s not a regular post in this i’m gonna show you guys how the famous kolkata kati rolls being prepared.As we know the famous kolkata kati rolls is loved from generation as it introduced or origin of the Indian Kathi Roll is often attributed to Nizam's, a popular eatery in Kolkata, India. According to popular belief, the Kathi Roll was invented in the mid-20th century by the owner of Nizam's, specifically by the descendant of the restaurant's founder, Nawab Barkat Ali as it is an ancient dish which is well known and most popular street food.
Kolkata Kathi Rolls are a beloved street food originating from Kolkata, India. These rolls consist of a flaky paratha kind of roti (a type of flatbread) stuffed with a variety of fillings as onion ,capsicum , carrot , califlower , spring onion , traditionally egg, chicken, or mutton, but now often including vegetarian options like paneer or mixed vegetables. They are spiced with tangy sauces, onions, and green chilies, making them both flavorfull and satisfying.
There are many types of rolls available in market in ranging from 20rs - 350 rs for per rolls yeah it’s resturant dp charge high but you can get it cheap in small outlets and Types of Kathi Rolls one of the popular street foods from the city of Kolkata, even in Gujrath as khati word is gujrathi and every fold of kathi roll tastes delicious to its core.

As of staring, we need to preapare roti and roti is basically of maida and corn flour. First dough is prepared by mixing maida flour 80% and corn flour 20% mixed in a cold water, cold water is basically used to not to get any air bubbles in a dough and kept for marination for 2-3 hours later, marinated dough is divided into small pieces as of appropriate amount required to preapare roti. This roti will be kind of fuffy and so awwfull to have.So the 50% work has been completed.
As we about to make-
FULL LOADED DOUBLE EGG DOUBLE CHICKEN ROLL 🍗
So as we marinated the dough we need to make it falt as in round shape by using some flour and oil so that it won’t stick, then make the roti by using roti roller which make the dough into falt thin circular shape and trun on the stove with pan having some oil so that dough should not stick to the pan. Put the rolled dough on pan and cook it on low flame
In this mean time break two eggs into some container and mix it well by adding some masala and salt and put it on pan as we make omellate.

And pan fry it until the roti becomes crispy and little
tured to red.
Then after take out roti from a pan and here comes the main part stuffing it up! Hehe 🫠 So , we need to pre-paired
Chicken curry so that we need to add into rolls. The pre prepaired chicken curry is basically boneless chicken which is marinated by appying turmaric for 30mins, later it is pan fried by adding some tasty indian chichen masala, garam masala, elaichi, clove, dal chini stick, and masala leaf so it drastically changes the flavour of chicken curry.
Then after that pan fried egg roti need to be stuffed with this tasty chicken curry and add on raw onion, carrot, capsicum, califlower with some chat masala, it gonna spice 🌶️ up the taste and roll it round with butter paper tightly so that it will not fall. So here the tasty full loaded the famous kolkata khati rolls is ready to get itself murdered 🤤. Its magical taste it bloom out your mood to next level. It can be paired with some coke gonna taste out of world. With add on lil tomato sos or spicy tomato ketch up and chilli ginger sos gonna make you feel heaven. It’s consisting of ancient indian spices with to give some tangy tint add some drops of lemon ahh it feels hell out of a world. You can mealt into spices as your feels so alive and incredible.
