Qurator's: Hive Top Chef! | Your Oldest Recipe | Seafood omelet
Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Your Oldest Recipe. One of the oldest recipes I have ever prepared has been with seafood. It is one of my favorite foods and a classic in the Eastern cuisine of my country, Venezuela. When I learned to cook, the easiest dishes for me were dry dishes, then stews, and then soups. The first seafood recipe I ever prepared was an omelet during Holy Week when I was 14 years old.
I love seafood, especially shrimp, squid, and mussels, so preparing this recipe was a real treat. There was no stress involved, unlike with other dishes. With this recipe, I learned how to use a plate to flip tortillas when they are large, as in this recipe. This tortilla was made with shrimp and mussels, and I added carrots, which is a vegetable I love.
Ingredients
- 90 grams of peeled and cleaned shrimp
- 160 grams of shelled and cleaned mussels
- 50 grams of finely chopped seasonings (chives, garlic, red bell pepper, and sweet chili pepper)
- 1 clove of garlic
- 45g carrot
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon of turmeric
- 3 eggs
- Salt and pepper to taste
- 2 tablespoons soybean oil
Preparation
1.-. Season the seafood to taste and then place it in a pot.
2.-. Peel the carrot, wash it, and cut it into small pieces. Also remove the skin from the garlic clove and chop it very finely. Add these ingredients to the pot where you have placed the shrimp and mussels.
3.- Add the seasonings (chives, garlic, red pepper, and sweet chili pepper) and spices (dried oregano, cumin, turmeric, and paprika). Cook until the seasonings are soft and the water has reduced slightly. Adjust the salt to taste.
4.- Preheat the pan with two tablespoons of oil over medium-low heat.
5.- Beat the eggs and add the shrimp and mussels. Mix so that they are well combined with the beaten eggs.
6.- Pour the eggs and seafood into the preheated pan and cook on one side until firm. Using a plate, flip the omelet. Lift the pan by the handle, place the plate on top, and flip it over. Then, place the pan back on the stove and carefully pour the omelet back into it. Cook for a couple of minutestos.
We served our dish, and I accompanied this seafood omelet with salad and avocado. I used parsley for decoration.
