Qurator's: Hive Top Chef! | Cabbage | Cabbage croquettes with tuna and mozzarella cheese
Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Cabbage. When I read that this week's challenge had cabbage as the main ingredient, I didn't know what to do, but then I suddenly thought of making cabbage croquettes with tuna and mozzarella. To give them consistency, I decided to use potato, oatmeal, and egg.
One secret I will share is what I did to avoid gas, one of the problems with eating cabbage. I just had to boil it in water and that was it. Don't cook it, just boil water, turn off the heat, pour the chopped cabbage into a colander, stir and strain, and that will be enough.
This step not only helps prevent gas, but also softens the texture of the cabbage, which is naturally a bit tough and chewy, making it easier to prepare the croquettes. By the way, they turned out very tasty. This is the first time I've used cabbage in a recipe; I don't usually buy this vegetable. I hope you like the recipe.
Ingredients
- 160 grams of repollo
- 1 potato (180 grams)
- 1 cup oat flour
- Breadcrumbs, as needed
- 1 clove of garlic
- 100 grams of canned tuna
- 1 egg
- 60 grams of mozzarella cheese, cut into cubes
- 1 tablespoon vinegar
- 1 teaspoon paprika
- 2 teaspoons dried oregano
- 2 teaspoons of ground onion
- 1 teaspoon of cumin
- 1 teaspoon of turmeric
- Salt to taste
- Frying oil, 2 tablespoons for every three croquettes
Preparation
1.-. Peel the potato, cut it into cubes, and cook until soft. Once ready, strain and mash. Set aside.
2.-. Wash the cabbage and then soak it in water with vinegar for 5 minutes.
3.- After the time has passed, wash the cabbage and chop it into very small pieces.
4.- Bring water to a boil in a pot. When it comes to a boil, turn off the heat and add the cabbage. Stir and strain. Set aside.
5.- In the bowl where we have placed the mashed potatoes, add the oatmeal, seasonings, chopped garlic, and salt to taste. Mix togethe.
6.- Then, add the egg, cabbage, tuna, and mix. Adjust the salt to taste.
7.- Form the croquettes until all the mixture is used up. Place a cube of mozzarella cheese in the center of each one and close them. Then, coat them in breadcrumbs on all sides and fry them over medium-low heat until they are golden brown on both sides. When done, place them on paper towels to remove excess grease.
All that's left is to serve them. I love dipping them in tomato sauce.
