From Tight Budgets to Flavorful Feast🎉

Another Day, Another Recipe to Share

The past few weeks have been financially tight, and I wasn’t able to cook a decent dish. My husband kept mentioning how excited he was for me to cook his favorite meal again since he had been craving it during those weeks of strict budgeting. Thankfully, our budget has become more flexible now, and I was able to buy the ingredients to prepare his favorite dish.

Let me share this recipe with you. It’s a well-known dish in our country, often served at celebrations. I’m only making a small amount since it’s just for me, my husband, and our child.

Ingredients:

1/2 kg chicken parts (cut)

1/2 cup coconut milk

2 tablespoons curry powder

1/4 teaspoon ground pepper

1 whole green bell pepper

2 whole potatoes (feel free to add more; just adjust the seasoning accordingly)

1 whole carrot (you can add more if you like; adjust seasoning to taste)

1 whole onion

3 cloves garlic

1/2 cup water

Oil for sautéing

Salt and MSG to taste (optional)

Procedure:

Clean the chicken,slice the onion,garlic,tomatoes and carrot first in medium sizes.

Heat oil in a pan. Sauté the garlic until it turns golden brown and fragrant, then add the onion and cook until translucent.

Add the chicken and mix well. Cover with a lid and cook until the chicken turns slightly brown.

Add the potatoes, carrots, curry powder, and ground pepper. Stir everything together.

Let it sauté over low heat for about 5 minutes, then add the coconut milk and water.

Season with salt and MSG, if desired. You may skip these if the flavor is already sufficient for your taste.

Let it cook over low heat for about 10 minutes. Then add the green bell pepper and cook for another 3 minutes on low heat.

Every time I cook this dish, I feel excited because it’s my husband’s request. As I mentioned in a previous post, he is the ultimate judge when it comes to cooking. I love hearing his compliments, whether good or constructive, as it helps me improve my skills.
