Ingredients:
400 grams of button mushrooms from the shop
2 small onions
2 small potatoes
1 green paprika
4 cloves of garlic
1 tsp salt
1 tsp black pepper
3 tsp oil
1/4 tsp red chili powder.
2 tsp butter for brushing bread
few parsley leaves
bunch of spinach stems
1-2 cup yogurt for the sauce

my homemade sourdough was too wet so i added 1 cup of white flour and 1/2 tsp salt to make the dough softer and easy to roll into a flat circle like a pie crust.

kept the dough for rest.

Cleaned and Chopped all vegetables including mushrooms.

mu1.jpg
In an iron pan added 2 tsp oil and 1 tsp I saved for use later.
Added chopped garlic and onion stirred for 2 minutes.
Added chopped potatoes and paprika stirred together with onion and garlic.
Added salt and pepper.

mu2.jpg

Stirred in chopped parsley and spinach stems.
Then chopped mushrooms.
Stirred mushrooms in with the other vegetables.

After cooking for 3-4 minutes on low heat, the mushrooms got softer but some juice was formed, I removed some juice and saved it for making sauce.
Added cornstarch (1 tsp cornstarch + 3 tsp water mixed together) slurry to the mushroom mixer to thicken the rest of the juice.

Made 4 portions from the dough.
and rolled them in circles about 1/2 cm thick. and all the same size.
Used two to make one bread, one top and one bottom.
Sprinkled some chili oil (1 tsp oil I saved and mixed 1/4 tsp red chili powder in to make chili oil.)
Then spread the mushroom mixture on one circle.

Put another circle on top of the mushroom spread circle and packed the top and bottom tightly together. and made pockets
The first pocket I baked normally but for the second one, I blew some air into it, using a straw.
At around 220 C preheated oven I baked them for 12 minutes.
And while they are warm brushed some butter on the top.

Used mushroom juice to make a simple sauce just by adding yogurt.

Bon Appetit
Happy fungi Friday.
