Stepping in different culture. Making rice paper rolls.
Hello, it is strange when you do something out of the ordinary in your routine. Today i did it making rice paper rolls it is not really my style but i just tried it to find out how people enjoy it. And i liked it. i think a little change of taste is something every body should try once in a while.
Ingredients:
2 big leaves of cabbage
1 small carrot
5 small leaves of purple cabbage
juice from 1/2 lemon
3 garlic cloves
1/2 red paprika
3 sprigs of cilantro
1 small cucumber
2 spring onions
1 red onion
1 small avocado
1 apple
a few calendula flowers and mint leaves.
2 chanterelle mushrooms picked from forest.
Rice paper
2 tbsp peanut oil
1/4 tsp chili flakes
1/2 tsp black pepper
1 tsp salt
1 tsp sugar
Making vegetable filling to paper rolls.
Wash and chop all vegetables in fine slices.
In a pan heat 1 tbsp peanut oil.
Add finely chopped garlic and stir until it turns brown.
Add spring onion and sliced red onion.
Stir until onion becomes translucent.
Add all sliced vegetables.
Mix them thoroughly.
Add salt pepper and chili flakes and stir once again.
Juice 1/2 lemon and add juice into vegetables. cook the vegetables just enough to keep them a little crunchy.
Use 1.5 tsp cornstarch to make slurry. stir in with the veggies this slurry will soak up all the liquid and the mixture will become sticky.
finally add 1 tsp sugar to get some tangy taste.it is optional.
Here is the vegetable mixture nice colorful and crunchy.
Making the dipping sauce:
ingredients:
2 tbsp home made date chutney
1 tbsp chili vinegar
1 tbsp brown sugar
2 tbsp home made mushroom soy sauce.
1 tsp sesame seeds
2 pinches of chili flakes
1 tsp chopped chive.
1/2 tsp salt
Mix sesame seeds, salt, chili flakes, brown sugar, and chopped chive.
First add date chutney
then chili vinegar
soy mushroom sauce.
Give a nice stir and the dipping sauce is ready.
Making rolls:
I made some slices of apple, cucumber and avocado to make little milder taste.First time used bird eye chili it was very hot.
here is rice paper, vegetable mixture and cucumber slices, avocado slices, and apple slices.for final process.
Soak rice paper in the water just for a few seconds.
put it on silicon sheet
spread vegetable mix and some slices of avocado, apple and cucumber and roll them carefully.

After rolled rice paper.
Heat the pan with 1 tbsp oil and carefully fry the rolls on low heat or can eat just like raw. Frying mak themes nice and crispy.
