childhood memories my first winning recipe in school contest. The green sandwich
Hello, greetings. When I was in India I met my childhood friends and we reminisced our school time memories. One of my memories was creating this green sandwich that won a cooking competition when 1 was in the 8th standard. ,(before then i didn't know what a sandwich was) It was under the guidance of my class teacher.
It was the first time i ever participated in such a competition and i won first prize. I am very thankful to my class teacher who encouraged me to enter in contest.
I tried to remember how I made it so many years ago and i came up with this new version.Today I used some olives and cucumber but as I remember That time it was very simple with tomato onion and the green spread..
ingredients:
making the spread
2 green chilies
1 cherry size tamarind
1 spoon mint leaves
2 tbsp fresh coconut
2 tbsp fresh coriander
1/4 tsp cumin
1/4 tsp salt
1 tsp sugar
1 small onion
3 garlic cloves (Indian)
Vegetable filling
1 sliced tomato
1 sliced cucumber
1 sliced onion
4 olives ( i never tasted olives before I came to western countries.so there were no olives in my Indian small village but I used them now in this sandwich)
4 slices of sandwich bread.
Ground all the ingredients for the spread together; the green chilies, onion, coconut, mint, coriander, salt sugar, cumin tamarind, and garlic.
Here are the all things I used for making sandwich.
Toast bread slices using homemade coconut oil.
First spread little more coconut oil I didn't use any butter or mayonnaise. then the green spread on two slices.
Cucumber slices.
Onion slices.
Tomato slices.
Spread green spread on other two bread slices.
put them on the prepared slices.
Again some green spread on top.
Again garnish with onion slices olives and cucumber and tomato slices.
Back then i might have made differently than this time but the taste is amazing with childhood memories.It looks very easy now but that time it was an adventure to make western food. Thanks to my teacher who had taught me first lesson to participate in cooking contest. This post is dedicated to my teacher.

The chili and coriander spread sounds lovely! I bet it can be used for many things other that sandwiches too. Maybe as a dip for cucumbers and carrots, or for a marinade, or just as topping on rice? 😋
