Summer's Strange Kitchen - Brownie Pancakes (With banana)

Greetings from my weird little corner of the world!

Whenever I have bananas that have gone too ripe (a constant issue around here) I like to use them for baking. Now, banana bread and muffins and all those things are lovely, don't get me wrong...but sometimes, you just don't feel like more banana bread...

Whenever possible, I like using bananas for my brownies because they are pretty awesome for adding to that fudgey awesome brownie texture, while also creating a certain depth of flavour to the chocolate, added to that, you can also replace some of the oil and sugar in your brownies when using banana!

Now, I don't usually have a lot of baked snacks and sugar anymore, but I have been on a bit of a chocolate kick lately...somehow that led to this idea....chocolate brownie mini pancakes!

Recipe & Method

Ingredients:

• 1 Cup Flour
• 1/3 Cup Cacao Powder
• 2 Teaspoons Baking Powder
• Pinch Salt
• 2 Bananas
• 1/4 Cup Coconut Oil
• 1/2 Cup Sugar/Honey
• 1/2 Tablespoon Vanilla Essence
• 2 Eggs
• 1/4 Cup Milk

Method

Add flour, cacao, baking powder and salt to a bowl and whisk to combine (can be sifted, but I pretty much always opt for just whisking it)

Add bananas, oil, sugar, vanilla, eggs and milk in large bowl and whisk well

Add flour and cacao mixture to wet ingredients.

Mix until combined, do not over mix.

Cook in hot frying pan, flipping once set. Do not over cook.

And that's it! Pretty easy right?
