For today’s entry to the Creative Sunday Initiative, I made sausage rice.

I received some friends over the weekend, they came over to my neighbourhood and used the opportunity to say hello. I was very low on cash so I decided to make something very simple that wouldn’t cost me too money. The good part was that I had the majority of the recipes which made things very easy for me.

Rice is a common food globally and it’s hard for many people to do without it daily. The food has become a ritual in many parts of the world especially in Africa, Asia and others. I love rice as well and one of the things that has kept us going with it is because of the numerous ways it can be prepared.

We have the jollof, fried, white, coconut and others, and being able to prepare rice in different forms is why a lot of people don’t get tired of it. Sausage rice is one of the ways to prepare rice and it is quite economical, you can tell from the recipe.

Recipe

  1. Rice
  2. Sausage
  3. Pepper
  4. Basil leaves
  5. Groundnut oil
  6. Fish
  7. Jollof powder
  8. Curry
  9. Pepper soup powder
  10. Seasoning cubes
  11. Onions
  12. Salt
  13. Green pea
  14. Sweet corn.

Procedure

Before going into the preparation, all recipes must be properly washed and processed.

I parboiled the rice, fried the fish, sliced the basil leaves, onions, sausage and pepper.
After doing all that, I moved on to the preparation.


  1. I heated the groundnut oil first.

  2. I added the greenpea, sausage, sweet corn, onions and pepper one after the other, and allowed them to fry under low heat for about two minutes.

  3. I added the tomato paste and all the seasonings, I stirred them well so they could mix properly together and allowed everything to fry again for another three minutes still under low heat.

  4. I added water and stirred again. Remember the rice was only parboiled so I needed water to cook it completely.

  5. After the sauce boiled, I added the parboiled rice and stirred it again properly before covering it to cook for about seven minutes.

  6. I added the basil leaves and allowed them to cook again for 3 minutes, all under low heat.

As I mentioned earlier, the food is economical but nutritious. It came out really well and I am glad my guest enjoyed it.

Sausage rice, interesting. I have not yet tried this recipe before but this looks yummy and the steps are quite easy. I enjoyed watching this video G.

Hmm interesting one, it's a very nice recipe and I can already tell it will be delicious.

I saw that you added the green peas before every other thing while frying, is it soft enough to add first? Or is that not the peas that's hard even after much boiling? 😅

I only soaked the green pea in water first so to make it soft, I fried before cooking and that will make it softer.
