A very Simple Egg Soup Recipe
Hello Everyone
Today I was craving egg soup, and I didn't have enough funds, but egg soup doesn't really need much money actually,so I'm in luck. As a food blogger I decided to share my journey with you....yes you reading this right now, so join me as I make my low-budget egg soup.

Ingredients
5 eggs
½ of okro
¼ of Crayfish
2 pairs of seasoning cubes
1 medium-sized smoked fish
15 pieces of fresh pepper
¼ Teaspoon of salt
2 bulbs of small onions
13cl of Red oil
Veggies
17cl of Water(half of a regular satchet water)


The Process
Prep all your ingredients i.e wash your okro thoroughly and chop them, wash your fish and piece them, beat your eggs, grate your crayfish and pepper (I did mine together) that's after thoroughly washing your pepper and separating chaff from your crayfish, wash and slice your veggies into small pieces and of course slicing your onions.

As seen our ingredients are well-prepped.
Step 1
Place a clean pot on your cooking gas, ensure it is dry before pouring in your Red oil, and allow the oil to stay on fire for 4 minutes


Step 2
After that pour in your sliced onions and fish into the pot of oil and stir well allow to cook for just 2 minutes


Step 3
At this point, pour in your beaten egg, don't stir, cover your pot, this is to help the egg form, and this should take just 3 minutes.


Step 4
After that, you can now open the pot and stir the egg using your spoon, and break the formed egg into pieces.

Step 5
This is where your water comes in

Step 6
After adding water, you can now add your seasoning cubes, salt, crayfish, and pepper, stir, and taste(the taste was okay for me, so there was no need to add either more seasoning or salt). After that, cover the pot and allow the mixture to boil well.


Step 7
Then, into the pot of boiling goodies, pour in your okro and stir, then allow to boil, but don't cover your pot at this point again(this is to allow your okro to have a little slimy consistency).


- N/B: if you cover the pot you cook with automatically turns to water, there will be no slime.
Secondly, egg soup is enjoyed if the okro isn't too slimy; a little slimy consistency is okay; in other words, don't blend or pound your okro.
Step 8
At this point your soup is done, you add your veggies(either pumpkin leaf or any green leaf of your choice, mine was odusa leaf) this is to spice up things and give your soup that little greenish look.

Your soup is ready for consumption

It can be served with semo, fufu, garri, amala, wheat etc.
I had mine with garri, it was simply delicious.
