I hope you are happy and healthy. Today, I will share a recipe of cabbage and oat soup. This wholesome and nutritious Cabbage, Carrot, and Capsicum Oat Soup is a perfect blend of fresh vegetables and fiber-rich oats. It's a hearty and healthy meal that is both satisfying and easy to prepare, making it ideal for a light lunch or dinner.Let's make this recipe together.

๐ŸŒŸ1/2 cup oats
๐ŸŒŸ1 cup cabbage, shredded
๐ŸŒŸ1 cup carrots, diced
๐ŸŒŸ 1 cup capsicum (bell pepper), diced
๐ŸŒŸ 1 onion, finely chopped
๐ŸŒŸ 2-3 cloves garlic, minced
๐ŸŒŸ1 small piece of ginger, minced
๐ŸŒŸ4 cup water
๐ŸŒŸ1 tablespoon oil
๐ŸŒŸSalt and pepper to taste
๐ŸŒŸFresh coriander leaves for garnish
๐ŸŒŸA pinch of red chili flakes (optional)
๐ŸŒŸ 1/2 teaspoon soy sauce

Preparation:
๐Ÿ‘จโ€๐ŸณWash and prepare all the vegetables. Shred the cabbage, dice the carrots and capsicum, and finely chop the onion, garlic, and ginger. And soak the oats in water.

Cooking the Vegetables:
๐Ÿ‘จโ€๐ŸณHeat oil in a large pot over medium heat.Add the minced garlic and ginger, and sautรฉ for another minute.
๐Ÿ‘จโ€๐ŸณAdd the chopped onions and sautรฉ until they turn translucent.

Adding Vegetables:
๐Ÿ‘จโ€๐ŸณStir in the shredded cabbage and cook for another 2-3 minutes.


๐Ÿ‘จโ€๐Ÿณ Add the diced carrots and capsicum to the pot and cook for 4-5 minutes until they start to soften.

Cooking the Oats:
๐Ÿ‘จโ€๐Ÿณ Pour in the water and bring to a boil.

๐Ÿ‘จโ€๐Ÿณ Add the oats to the pot and stir well to combine with the vegetables.Add chili flakes, soy sauce and pepper. Mix well.

Simmering:
๐Ÿ‘จโ€๐Ÿณ Reduce the heat to low and let the soup simmer for about 15-20 minutes, until the oats are cooked and the vegetables are tender.Garnish with fresh coriander leaves.

Serving: ๐Ÿ‘จโ€๐Ÿณ Serve the soup hot. Enjoy it with a slice of whole grain bread or as a light, nutritious meal on its own.
