Multigrain Spinach Pasta: A Nutritious Twist on a Classic Dish

I hope you are happy and healthy. Today i will share a healty pasta recipe. In my effort to create a healthier version of pasta, I recently experimented with multigrain flour and spinach puree.The process involved several steps, but the outcome was both delicious and nutritious. Here's a detailed account of how I made it and how my family responded to this culinary adventure.

๐ซ2 cups multigrain flour
๐ซ1 cup spinach puree
๐ซ 1 teaspoon salt (divided)
๐ซ 1/2 teaspoon ajwain (carom seeds)
๐ซ Water, as needed
๐ซ2 tablespoons oil (divided)
๐ซ1 teaspoon cumin seeds
๐ซ3-4 garlic cloves, finely chopped ๐ซ1 large onion, finely chopped
๐ซ 3 large tomatoes, finely chopped
๐ซ 1/2 cup tomato sauce
๐ซFresh basil leaves,
๐ซ1/2 teaspoon black pepper powder
๐ซ pasta seasoning
๐ซ carrot, capsicum, cabbage chopped
๐๐ฉ๐๐ฅ ๐๐ฎ ๐จ๐ฉ๐๐ฅ ๐ง๐๐๐๐ฅ๐

โ In a large bowl, mix the multigrain flour, spinach puree, 1/2 teaspoon salt, and ajwain. Add water gradually and knead the mixture into a smooth dough.
โ Cover the dough and let it rest for at least 20 minutes.

โ Heat 1 tablespoon of oil in a pan and add cumin seeds. Once the cumin seeds crackle, add the finely chopped garlic and sautรฉ until golden brown. Add the chopped onions ,green chilli and sautรฉ until they turn translucent.
โAdd the chopped cabbage, carrot, capsicum and tomatoes and cook until they become soft and mushy.

โRoll out the rested dough into thin rotis (flatbreads) and cut them into thin strips.
โIn a large pot, bring water to a boil, add 1/2 teaspoon salt and a little oil.Add the pasta strips to the boiling water and cook until they are done. Drain the pasta and set it aside.

โAdd the boiled pasta strips to the tomato-onion mixture.Add the tomato sauce, basil leaves, black pepper powder, and pasta seasoning.
โCook on low heat for a few minutes, allowing the flavors to meld together.

I made this dish for my husband and myself as an experiment. My husband loved it and appreciated the healthier twist.
