Looks like a post card tourist trap but I still would want to visit. The silting of the river saved this town from being developed or should I say more modernized which is quite cool. The food must be good or have the influences of Chinese and Japanese culture disappeared and it is normal Vietnamese food now?

Its definitely a tourist trap, but without feeling gimmicky. The small roads can get crowded with people during high tourist season, but in many ways life still goes on in a rather traditional fashion throughout much of Hoi An. The Chinese and Japanese will come as tourists, but there are no settled neighborhoods with them that I know of, so it is going to be mostly Vietnamese food. That being said, there is a wide variety traditional food that can be found here and I'm sure some of it may have been influenced from other cultures. Also, Hoi An is popular with expats so there are many other foreign food options around.
It didn't look gimmicky and why it is going to even be a bigger attraction because people want to see areas and buildings unspoiled.
