Super easy biscuit recipe
What a special Easter with our lovely family! I was just telling my mom how grateful I am that she taught me how to bring magic into my home through baking, crafts, and festivities, no matter what is going on in our lives. The children feel it and it rubs off on us grouchy adults too!

My back was (and still is) giving me hell at the moment, so I had to put @aimeludick in charge of cookie duty this year! All I did was write out the recipe and method for her and off she went! With some help from @merenludick , the two of them baked and decorated these awesome Easter-themed cookies for us and the neighbours! I was genuinely surprised at how brilliantly they handled it unsupervised and that the whole kitchen wasn't stained with food colouring :p

Here's the super easy recipe for you!
Biscuits
Utensils:
Baking paper & spray and cook
Big plastic bowl for mixing
Baking trays
Electric Mixer
Spoons
Cookie cutters

Ingredients:
125g butter (soft)
1 large egg
125ml sugar
500ml flour
1 teaspoon baking powder
1 teaspoon vanilla essence

Method:
This very easy biscuit recipe is handy for all festivities!

Cream the butter and the sugar together with a mixer. Add the egg then add the vanilla essence.

Now add the Flour and the baking powder. Mix together until well combined to form a stiff dough.

Roll out onto a surface, to about 1/2 cm thick.

Cut out shapes and place them on a lined and greased baking tray

Royal Icing
Utensils:
Electric Mixer
Big plastic bowl for mixing
Spoons

Ingredients:
2 x egg whites
500g icing sugar
1 teaspoon lemon juice
Colours of your choice!

Method: Whisk egg whites until foamy.

Gradually whisk in about half the icing sugar - 1 spoonful at a time.
Whisk in the lemon juice and continue adding the rest of the icing sugar.

Whisk until soft peaks appear.

Cover icing until ready to use to prevent it from drying out. Use a pallet knife, spoons, or piping bags to decorate your cookies!

We split the icing up into smaller bowls and added a bit of food colouring to make things fun!

All the kiddies also got some Easter eggs, although we're too lazy to hide them now :p here are some photos of happy faces and their chocolate loot!

Parenting hack: Easter eggs are cheaper the day after! hahaha. @matthew-williams was with his dad all week, so I only bought his ones this morning. They were already on special. Lol. @zakludick let's watch the shelves for the next few weeks nudgenudgewinkwink <3

That must have been a load of fun for the kids, you must have taught them well for the kitchen not to be messy! I wonder just how much cookie dough was eaten;)

I am really so proud of them!! has @aimeludick been helping me with baking and cooking for a while now, so she's getting the knack. This was our first attempt at biscuits, with her taking charge completely and certainly her first go a royal icing, which can be tricky to get to set if there's too much humidity etc. She did a perfect job!
