Looks like I better hold onto my handful of grain lands then. I still have some wood producing too, but they aren't in the same region and I think I am going to eventually run out of grain to support them.

If the wood regions already have grain then you will be able to harvest but in time you will run dry. Then, it's either trade wood for grain using the trade hub or sending some over from your grain region (subject to tax).
Yeah, I was good, but then they made my other grain land a wood land and now I am going to be at a deficit.
Assuming you did not sell any grain before, you should have a stockpile. It will likely last for some time.
