Growing up I have come encounter with different meal and the only dish which happens to captured my heart was Pounded yam and egusi soup despite being a beans and bread lover.

How to prepare pounded yam
Start by selecting fresh yam tubers from your local market. Look for yams that are firm, free of bruises, and have a smooth texture.
Peel off the yam skin using a sharp knife and cut the yam into medium-sized slices.

Rinse the yam slices thoroughly to remove any dirt or impurities.
Place the yam slices in a large pot filled with water and boil until they are soft and tender.
Once the yam is cooked, transfer the slices into a mortar or a sturdy bowl.

Use a pestle or a large wooden spoon to pound the yam very well until it becomes smooth and stretchy. This process requires strength and patience, Na why my mama dey always make me pound😅, but the result is worth it.

Continuously fold the pounded yam over itself to achieve a uniform texture.
Serve the pounded yam hot alongside the delicious Egusi Soup.

Egusi Soup is a flavorful and aromatic Nigerian soup made from ground melon seeds, assorted vegetables, and a variety of meats or fish. To prepare this delightful soup.

Begin by gathering the necessary ingredients: ground Egusi seeds, palm oil, assorted meat or fish (such as beef, chicken, or fish), assorted vegetables (such as bitter leaf or spinach), onions, crayfish, stock cubes, and other desired seasonings.

In a large pot, heat the palm oil on medium heat and add finely chopped onions. Sauté until the onions become translucent.

Add the assorted meats or fish to the pot and cook until they are well browned.

Sprinkle in the ground crayfish and stock cubes, allowing them to infuse the meat with their flavors.

Add the ground Egusi seeds to the pot, stirring continuously to prevent lumps from forming.

Gradually incorporate water into the mixture to achieve the desired consistency, ensuring it is not too watery or too thick.

Cover the pot and let the soup simmer for about 20–30 minutes, allowing the flavors to meld together.

Finally, add the assorted vegetables and let them cook until they are tender.

Serve the delicious Egusi Soup alongside the pounded yam, and savor the blend of flavors and textures.
