What Seeds To Sow Next?

Sowing SEEDS!
It's really getting to be THAT TIME of year! I am not doing daily gardening tasks... despite the freezing temps and snows so deep my kn ees are buried.

I have planted another round of indoor salad greens, some beet greens, some peppers, and eggplant seeds.

Top shelf is onions on the left, multi sown. On the right, is leeks, peppers, a few Early Roma Tomato, and eggplant. In the silver tray, middle shelf, is some salad greens, and some beets I will harvest as beet greens, for making some salads. Bottom Shelf is some herbs, and the indoor lettuce that's ready for picking this week.

It's end of First week of February, and I am trying to decide what seeds to sow! I check my planting calendar and find, I need to get some Pepper Seeds sown, some eggplant, and also, another batch of indoor salad greens!

My Gardens are in New England, zone 7a and 7b!

Most of you know, I prefer to grow my own food, locally. It's healthier for my family, and for the planet. I know what goes into my foods, and what chemicals are NOT in my food. Also, It cuts down on carbon emissions, less trucking, planes, trains, and boats, to get fresh foods to my table.
