I Made a New Recipe Booklet / Designed a Menu (ENG/SPA)
Hello, Internet people, everything ok? As most of you may know, I am a Chef, and in my new job I was asked to make a dessert menu, so I agreed to do the favour and I will tell you about the process.
Hola, gente de Internet ¿todo bien? Como quizá la mayoría de ustedes sepa, soy Chef y en mi nuevo trabajo me pidieron realizar un menú de postres, por tanto acepté hacer el favor y les contaré el proceso.
This is my recipe book. The first thing it has is a conversion table of tablespoons and cups to kg and grams (it's quite useful).
Este es mi recetario. Lo primero que tiene es una tabla de conversión de cucharadas y tazas a kg y gramos (es bastante útil)
In gastronomy, the head chef, or in this case the pastry chef, among other tasks or duties, must design the menu of the restaurant for which he or she works. In the restaurant where I work there is no pastry area as such, so there is no pastry chef, but the bosses asked me to make a dessert menu for them and I accepted.
En gastronomía el jefe de cocina, o en este caso jefe de pastelería, entre otras tareas u obligaciones debe diseñar el menú del restaurante para el que trabaja. En el restaurante donde trabajo no hay un área de pastelería como tal, por lo tanto no hay cargo de Jefe de pastelería, aún así, los jefes me pidieron el favor de hacerles un menú de postres y acepté.
In the recipe books I make I always put the name of the dish, the ingredients, the procedure and in personal notes or on the recipe as such, I put in another colour (preferably red) the corrections I make.
En los recetarios que hago siempre coloco el nombre del platillo, los ingredientes, el procedimiento, y en notas personales o sobre la receta como tal, pongo en otro color (preferiblemente rojo) las correcciones que hago.
Going back to the menu, there are several points to take into account according to the capabilities of the restaurant in question, in this case: desserts without oven or short baking time, preservation, a low cost, good presentation and an attractive concept.
Volviendo al menú, hay varios puntos que tener en cuenta según las capacidades del restaurante en cuestión, en este caso: postres sin horno o poco tiempo de horneado, preservación, un costo bajo, buena presentación y un concepto atractivo.
Today (when I go to work) I will sit down with my bosses to talk about the menu: choosing names, concepts, presentation, etc. We also have to do the tests, because when you write a recipe, you write based on your knowledge of flavours, textures and presentation, but you have to do tests (prepare the dishes) to make sure that everything is correct, and to know if you have to make corrections or not. In another post I will upload photos of the results.
Hoy (cuando vaya al trabajo) me sentaré con mis jefes a discutir el menú: discutir los nombres, los conceptos, la presentación, etc. Además también tenemos que hacer las pruebas, y es que, al elaborar una receta, se escribe en base a conocimientos sobre sabores, texturas y presentación, sin embargo se deben hacer pruebas (preparar los platillos) para asegurarse de que todo esté correctamente, y saber si hay que hacer correcciones o no. En otro post subiré las fotos de los resultados.
