I have no problem with them being able to reject them before included in the blockchain, especially if there is some incentive/disincentive attached to those actions.

Reversing transactions already included? Nope.

Yet it can and will be done, especially on blockchains run by small groups of validators.

Yep. I for one will try and avoid those if I know about it. Just my personal preference.
