A Refreshing and Yummy Kamote Con Yelo for my Daughter

Weekdays mean school day. That being said, my daughter would arrive from school looking for a delicious snack.

She's not a fan of boiled sweet potatoes, so I tried to think of another way to make it more special.

What I would be doing is Kamote Con Yelo (caramelized sweet potatoes with milk and ice).

This is a perfect dessert or snack for kids. My daughter's taste buds are not fond of root crops. Yet, she can eat this because it is caramelized.

Aside from that, sweet potatoes are loaded with significant health benefits, which include beta carotene for vision and immune system support.

She really needs healthy snacks since coughs and a cold are common, especially for kids her age.

So let's get start.

INGREDIENTS (Quantities)

  • 4 medium-sized pieces - sweet potatoes, peeled and cut into 2-inch cubes
  • ½ cup water
  • ¼ cup brown sugar
  • 1 teaspoon drop vanilla extract

For the assembly:

  • Ice cubes
  • 1 can of evaporated milk

Steps:

Peel the sweet potatoes. To prevent oxidation, place the sweet potatoes in a bowl of cold water.

Put the camote cubes into the pot.

Next, put the water.

Then, put the brown sugar.

Lastly, drop the Vanilla extract

Bring it to a boil until fork-tender and stir it once in a while, about 15-20 minutes.

Stir gently to coat the sweet potatoes evenly with the sweet syrup.

Let it cool for a while.

Assemble the Camote Con Yelo:

Prepare the glass.
Put 2 tablespoons of the sweet potato cubes.
Put the ice cubes or shaved ice.
Then pour the evap according to your preference.

Here's the finale:

I can't wait to eat it together with my daughter. She loves to have an ample amount of milk on her camote con yelo. I prefer less milk but with lots of sweet potatoes.

Regardless of our preference, we will surely have fun talking about her school experience while eating this yummy snack.
