My Savory Chicken Macaroni Salad
Hello everyone!!
Let's have a savory macaroni salad. I'm sure you are all familiar with this dish, especially my co-Filipino Hiveans. However, I still want to share and post my version here.
So, let's see my detailed recipe for this famous salad.
My Savory Chicken Macaroni Salad
INGREDIENTS:
- Elbow Macaroni Pasta
- Chicken Fillet
- Mayonnaise
- Condensed Milk
- Creamer
- Evaporated Milk (optional)
- Cheese
- Carrot
- Pineapple Tidbits
- Raisins
- Sweet Pickle Relish
- Bell Pepper
- Raisins
- Salt
- Water
PREPARATION AND COOKING:
Wash the chicken thoroughly.
Wash and peel carrots, and then shred.
Wash and cut the bell pepper into small cubes.
Cut the cheese into smaller cubes.
Drain the pineapple tidbits and cut them into smaller pieces.
Set them all aside with the rest of the ingredients.
Boil some water in a pot or cooker. Once boiling, add the chicken and cook. Remove the chicken when it's already cooked and transfer it to a plate, and let it cool down. Then shred the chicken and set it aside.

I added 2 cups of water to the remaining water from the boiled chicken after skimming some impurities. Then I also add 1 tsp of salt. When it starts to boil again, add the elbow macaroni pasta. Cook them according to package directions until they're tender but firm and al dente. Strain and drain, and then set aside to cool down completely.
***Let's now assemble or mix the macaroni salad. ***


Transfer the drained macaroni to a larger bowl, then add the shredded chicken, shredded carrots, diced cheese, raisins, bell peppers, and sweet pickle relish. Toss and mix them well.
Then add the mayonnaise, condensed milk and all-purpose creamer. (I did not add the evaporated milk because it's already creamy). Just toss and mix them properly until well combined.
And voila...!! So rich and creamy. Refrigerate for an hour or more.

I made this yesterday and gave some to my niece @adamsale as her pasalubong for her family. I cooked puto maya too, because it's her mom's favorite (my younger sister) and a ready-to-cook marinated chicken, as they always love my dishes every time they visit us here at home.
My sister was really so happy with the food, and that makes me happy too.
