Kamote or Sweet Potato Delight...

My family doesn't eat rice for breakfast. We usually have some wheat bread and sometimes oatmeal. But lately, we've become fond of eating sweet bread from the newest bakery in our area. We couldn't resist eating them because they are so delicious. But we know it's not good for our health. So, we slowly cut it and lessen the amount we consume.
So, my daughter and I decided to make homemade pastries occasionally to ensure we know the amount of sugar and salt in them, as well as the ingredients we use.
One example we created for our breakfast and snacks is the "kamote or sweet potato delight". There are various ways and various ingredients in making this. Some through baking, pan-frying, steaming, and more.
This time, we made it the simplest way, using fewer ingredients as well. Yes, "we" because my husband washed and boiled the sweet potatoes, my daughter @tegoshei helped me in preparing some of the ingredients, and she's the one who prepares the molders. So, it was a family team effort.
Let's take a look at how we made it.
Kamote or Sweet Potato Delight...
INGREDIENTS:

- 1 kg Kamote or Sweet Potato
- 1/2 cup Condensed Milk
- 1/2 cup Grated Cheese
- 1/4 cup All Purpose Flour
- 1 tbsp Vanilla Extract
- 1 pc large Egg, 2pcs if medium or small eggs.
- 1 tsp Salt
PREPARATION AND COOKING:

Wash the sweet potatoes and then boil them. When they're cooked already, let them cool down.

Then, peel them. After doing so, grate them and place the grated sweet potatoes in a larger bowl or any container of your choice. And then set aside.
Now it's time to mix the other ingredients with the grated sweet potatoes.

Add 1/4 cup of all-purpose flour, 1/2 cup of condensed milk, and 1 teaspoon of salt to balance the taste. Mix them well.

Then, add the beaten egg and vanilla extract. Mix them again thoroughly until well combined. Then set aside.


Prepare some molders bedded with baking paper. Transfer the sweet potato mixture to each molder and then top with some grated cheese.

Set them aside while boiling some water in the steamer. When it boils, steam the sweet potato for 15-20 minutes.


And there it is... It's perfectly cooked.

Let it cool down for a few minutes. It's really yummy, a little fluffy and not too sweet. It's best to eat while it's still hot, paired with hot coffee and tea.
We all love it, and I would like to make another version of sweet potato delight one day, and I will definitely share it here, too.
