Chicken Fillet with Potato and Carrot Dishπ₯π₯π₯ (Simple but Delicious)

Do you like to eat or cook chicken dishes? What part of the chicken do you like the most?
For me, it's the chicken breast or chicken fillet because this part of the chicken is versatile. I mean it can be cooked in various ways like grilling, baking, frying and a lot more. And most importantly, this part of the chicken is richer in protein, which we all need in our body.
And I always love to incorporate some veggies in my dishes, like what I did in our recent dish for lunch and dinner. Yes, lunch and dinner because we couldn't finish them all in just one meal, so we'll have to just reheat them for the next meal.π
So, let's take a look at how I prepare and cook this dish.
Chicken Fillet with Potato and Carrot Dish
INGREDIENTS:
- Chicken Fillet
- Carrots
- Potatoes
- Onions
- Garlic
- Ginger
- Lemon Grass
- Tomato Sauce
- Chicken Broth
- Knorr Liquid Seasoning
- Garlic Powder
- Salt
- Ground Black Pepper
- Raisins (optional)
- Canola Oil
PREPARATION:
Wash the chicken thoroughly. Slice them thinly and then rub some seasoning like salt, garlic powder and ground black pepper. Rub both sides of the chicken, then set aside.


Wash the potatoes and carrots. Peel and cut them thinly into your desired shape.
Wash and peel onions, then cut or slice them.
Crush and peel garlic, then mince.
Wash and peel ginger, then cut into strips.
Wash the lemon grass and cut the head part only.
Then set them all aside.
COOKING TIME:



Heat some canola oil in a pan or cooker. Fry the carrots and potatoes slightly, then transfer to a plate when they're done and set aside.



In the same pan, add a small amount of canola oil if needed and then fry the seasoned chicken fillet on both sides until golden brown. Then remove them from the pan and transfer them to a plate.


Again in a same pan with the remaining oil from the chicken, (if the remaining oil is still too much remove some of it and transfer in any container you want.) Just make sure to leave a little oil enough to sautΓ© the onions, garlic, ginger and the head part of lemon grass. Sautee them until aromatic and then add just 2 tbsp of tomato sauce. Stir and mix with the aromatics.


Then add the fried chicken fillet, carefully stir and mix them well. Then add the chicken broth, and then season with Knorr liquid seasoning and a pinch of salt to taste. Cover the pan and continue cooking on medium heat until the chicken becomes tender and the sauce reduces.


Then add the slightly fried carrots and potatoes and garnish some raisins in it. Cover the pan again and continue to cook for just 1 to 2 minutes, just enough for the veggies to absorb the sauce.





And Ta-da...!!!
Here's our simple but delicious and nutritious dish. This is my first time to cook in this way, but we all enjoyed it and had a happy tummy again.πβ€

looks good and you clearly seem to know what you are doing. I will say this though, I am like a child when it comes to carrots, I just really don't like the taste of them no matter how they are prepared.

And of course I can truly understand why you dislike the taste of carrots, I know some people who doesn't like the taste of it too. Even me at first but I tried to eat it fresh and raw at first and then I used to it later on. π
Oh, sakin po hita talaga, i like na di sya purong laman, ang feeling ko lang talaga mas malasa yong part na un haha.
Anyways, this looks really good, and with my fav veggies too in it. And may effect din po ba if you fry the veggies and di na isasabay sa pagpapakulo dun sa karne? Nakikita kong ginagawa dun yan ning ibang vlogger eh.

And yes, if you fry the veggies first, it gives a nice texture and it enhance the flavor too.
