Chicken Adobo with Kalabasa (Squash) and Sitaw (String Beans)

Hello Hiveans!! 💖

What are you having for lunch today? I hope everyone had/has a great, delicious and healthy meal today.

My family had "chicken adobo with kalabasa and sitaw” for lunch and it’ll be the same for our dinner today.

We can make various recipes for the chicken, incorporating different kinds of vegetables and using various cooking methods.

Here's how I cooked this delicious dish.

Chicken Adobo with Kalabasa (Squash) and Sitaw (String Beans)

INGREDIENTS:

)
)

  • Chicken (cut)
  • Squash
  • String Beans
  • Ginger
  • Onion
  • Garlic
  • Tomatoes
  • Green Chili
  • Kalamansi or Lemon
  • Pineapple Juice
  • Soy Sauce
  • Knorr Chicken Cube
  • Knorr Liquid Seasoning
  • Salt
  • Powdered Pepper
  • Bay Leaf
  • Canola Oil
  • Butter
  • Water

PREPARATION:

Wash the chicken thoroughly. Strain and marinate the chicken with pineapple juice, soy sauce, Knorr liquid seasoning, kalamansi juice and powdered pepper. Set aside after marinating and let it rest for at least 30 minutes.

Wash the squash, peel it, and remove the seeds. Then, cut it into larger cubes.
Wash and cut string beans.
Peel and wash the onion, then cut it.
Wash and peel the ginger, and then cut it into strips.
Crush and peel the garlic, then slice it.
Wash the tomatoes and then cut them.
Then set all the prepared ingredients aside.

COOKING TIME:

)
)

Heat a small amount of canola oil in a pan and then sauté ginger, onions and garlic until aromatic.

)
)

Then add the tomatoes, sauté them with the aromatics for a few seconds. Then add 1 tbsp of butter. Wait until it's melted. Then add the marinated chicken. Sauté them until the juice from the chicken itself renders and then evaporates.

)
)
)
)

Once evaporated, add the marinated juice. Bring it to a simmer and then add the chicken cube. Mix until it dissolves. Then add the bay leaf and continue cooking for a few minutes.

)

Then add the squash and mix until well combined. Then add the green chili and the string beans. Sauté and mix them well for a few seconds.

)
)

Then add water and let it simmer. Season with a pinch of salt to taste and ground or powdered pepper, as desired. Cover the pan and continue cooking until the chicken is tender and the veggies are cooked.
