Hola a todos, espero que estén pasando un bonito domingo. Me gusta seguir las tradiciones gastronómicas de la Semana Santa, y para mí, el manjar por excelencia siempre será el Cuajao de Pescado, conocido también como pastel de pescado. ¿Cuál usamos para su elaboración? Pueden ser muchos, pero para mí el cazón y el atún son los favoritos, aunque me gusta hacer combinaciones. Al momento de preparar el guiso, la fusión del pescado con los aliños, completa la magia de sabores. En esta oportunidad, hasta le incorporé un poco de pollo y su caldo, y toda esa mezcla quedó genial.

Comer el guiso para el cuajao con casabe y crema de ajo, también es parte de mis tradiciones. Pero armarlo en la bandeja, con el huevo batido, las papas sancochadas y el plátano frito, es el mejor momento. Se puede llevar al horno o hacer en la hornilla como se preparan las tortillas, todos estos ingredientes se cuajan con el calor, creo que de allí proviene su nombre tan criollo. Otros platillos de esta zona oriental durante estos días, son el sancocho de pescado, y el pastel de morrocoy.

I like to follow the gastronomic traditions of Easter, and for me, the delicacy par excellence will always be the Cuajao de Pescado, also known as fish cake. Which one do we use for its preparation? There can be many, but for me dogfish and tuna are the favorites, although I like to make combinations. When preparing the stew, the fusion of the fish with the seasonings completes the magic of flavors. This time, I even added some chicken and its broth, and the whole mixture turned out great.

Eating the stew for the cuajao with cassava and garlic cream is also part of my traditions. But to assemble it on the tray, with the beaten egg, boiled potatoes and fried plantain, is the best moment. You can take it to the oven or make it on the stove as tortillas are prepared, all these ingredients curdle with the heat, I think that's where its Creole name comes from. Other dishes of this eastern zone during these days are the sancocho de pescado (fish stew) and the pastel de morrocoy (morrocoy cake).

También tenemos las tradicionales empanadas de cazón, ésas son mis preferidas con guasacaca o crema de ajo. Aunque los pastelitos con el mismo relleno también quedan muy buenos.

En esta oportunidad no elaboré dulces tradicionales porque tenía antojo de comer una torta fría rellena de crema pastelera, y eso fue lo que preparé en estos días. A veces rompo los esquemas, pero por lo general, en estos días preparo arroz con leche o con coco, besitos de coco, o jalea de mango. Todos son una delicia. Felices pascuas!!

This time I didn't make traditional sweets because I had a craving for a cold cake filled with pastry cream, and that's what I prepared these days. Sometimes I break the schemes, but usually, in this season I prepare rice pudding or coconut rice pudding, coconut kisses, or mango jelly. They are all a delight. Happy Easter!
