Green Soybeans With Lemongrass Flavor

This is my way to serve Green Soybeans in the next level. Usually Green Soybeans are delicious to eat just boiled with a little salt.

But indeed, for my tongue, Green Soybeans can be combined with many things. Even with soup. But the easiest way is to serve Green Soybeans as a salad, along with the addition of several other ingredients.

I don't have many dressing options that suit my taste buds. Because indeed, I am used to living in Indonesia and there are not many popular salad dressings, except for salads in traditional ways.

Traditional salads in Indonesia use peanut sauce, also sometimes spiced grated coconut as well.

Then, for this time, I really wanted something strong but at the same time fresh. I still have lemongrass stalks. So, I thought of the idea of ​​making lemongrass salad.

Actually, you can also find lemongrass salad flavor in Bali. Called SAMBAL MATAH usually sliced ​​lemongrass is mixed with shallots and then drizzled with warm coconut oil.

My version of the salad is similar to that except that I don’t have coconut oil, so I just use regular vegetable oil. Of course, you can also choose to use healthier olive oil if you have olive oil at home.

Speaking of green soybeans, they are more popularly called edamame or Japanese soybeans. Indeed, green soybeans are rich in protein and are good to be used as snacks rather than eating high-carb snacks.

In my old garden, I even planted green soybeans, but the harvest was not optimal. But it was really fun to plant green soybeans in my own garden and I will try to plant green soybeans again later. Below I also have a short video about green soybeans (edamame plants)

THE INGREDIENTS

  • 150 grams of green soybeans / edamame
  • 1 cucumber
  • 3 small lemongrass stalks
  • 1 red tomato
  • 5 cloves of shallots
  • 2 tbsp of cooking oil to stir-fry shallots and lemongrass
  • 1/2 tsp of salt
  • (optional) chilies



COOKING INSTRUCTIONS

I prepare all the ingredients needed. Sure, I just need to cut them all, slice the shallots, slice the red tomatoes, also slice the lemongrass stalks. And, oh, I never forget about the chili, ehehe.

Boil the water. Then, add the edamame / green soybeans with 1/2 tsp of salt. Boil them for 5 minutes. Then, you can remove them. If you have ice water, then put the boiled edamame in the ice water before serving.

I also heat the vegetable oil. Then, add slices of shallots, keep stirring until it becomes fragrant then I add the chili and red tomato slices. Cook for a while and season with salt. And then remove them.

Just like other salads, it is very easy to serve. We just need to mix them together.

I prepared a serving plate, then arranged the cucumber slices. Then, followed by adding green soybeans / edamame that had been removed from the pods.

The last step is to add the lemongrass seasoning that I made earlier. Whoaaa, ​​this is really fresh but of course spicy according to my taste ehehe.

The lemongrass seasoning creates a unique aroma and blends well with the green soybeans and also the cucumber slices. Would you like to try it?
