Braised cabbage in sauce // Chou braisé en sauce [EN/FR]

Hello friends and food lovers! I hope you're all doing well đ
The cold is starting to set in here in Normandy, France. And to warm up, we tried cooking a winter vegetable: kale (Savoy cabbage).
We're used to eating raw red cabbage, or even raw green cabbage. But we'd never cooked kale before. So, we looked for recipes and discovered a recipe for braised cabbage in a sauce: so we gave it a try!
And it was a real revelation: it's tender, it's delicious, it's comforting! đ
It's quite easy to prepare, and quick. The longest part is the cooking time in the oven.
Anyway, here's the recipe for 2 people đ
Ingredients

- 1 half green cabbage (Savoy cabbage);
- 1 onion;
- 20 cl tomato puree;
- 25 cl vegetable broth;
- 2 tablespoons balsamic vinegar;
- Butter for cooking;
- 1 teaspoon honey;
- Salt and pepper.
Preparation steps
I started by cutting half the cabbage into 4 pieces:

Then, I put a good knob of butter in a pan and added the cabbage pieces to brown them for 4 minutes on each side:



I then set them aside on a plate.
I chopped the onion and added it to the pan to brown it for a few minutes as well:


Then I added the tomato puree:


Then, the balsamic vinegar:

I then added the vegetable broth:


And the honey:


Then, I let it simmer for about 5 minutes.

Then, in a baking dish, I added the cabbage pieces:

Then the onion/sauce mixture on top:



I baked for 45 minutes at 180 degrees.
And here's the result:




I served the braised cabbage with wholemeal pasta, but you can also serve it with rice, for example; it's really delicious! đ
And by the way, I added a little sriracha sauce for a little spicy kick, and I loved it! đ
It's a comforting dish that's great served piping hot!

On a lâhabitude de manger du chou rouge en cruditĂ©, ou mĂȘme du chou vert cru. Mais on n'avait encore jamais cuisinĂ© le chou vert frisĂ©. Alors, on a cherchĂ© des recettes et on a dĂ©couvert une recette de chou braisĂ© en sauce : donc on a testĂ© !
Et câĂ©tait une vraie rĂ©vĂ©lation, câest tendre, câest bon, câest rĂ©confortant ! đ
Câest assez facile Ă prĂ©parer, et rapide. Le plus long, câest le temps de cuisson au four.
Bref, voici la recette pour 2 personnes đ
Les ingrédients

- 1 demi chou vert (chou de Milan) ;
- 1 oignon ;
- 20 cl de coulis de tomate ;
- 25 cl de bouillon de légumes ;
- 2 cuillĂšres Ă soupe de vinaigre balsamique ;
- Du beurre pour la cuisson ;
- 1 cuillÚre à café de miel ;
- Du sel, du poivre.
Les étapes de préparation
Jâai commencĂ© par dĂ©couper la moitiĂ© de chou en 4 morceaux :

Puis, jâai mis un bon morceau de beurre dans une poĂȘle et jâai ajoutĂ© les morceaux de chou pour les faire dorer pendant 4 minutes de chaque cĂŽtĂ© :



Je les ai ensuite mis de cÎté dans une assiette.
Jâai dĂ©coupĂ© lâoignon et je lâai mis dans la poĂȘle pour le faire dorer aussi pendant quelques minutes :


Jâai ensuite ajoutĂ© le coulis de tomate :


Puis, le vinaigre balsamique :

Jâai ensuite ajoutĂ© le bouillon de lĂ©gumes :


Et le miel :


Puis, jâai laissĂ© mijoter pendant environ 5 minutes.

Ensuite, dans un plat allant au four, jâai ajoutĂ© les morceaux de chou :

Puis le mélange oignons / sauce par-dessus :



Jâai enfournĂ© pour 45 minutes Ă 180 degrĂ©s.
Et voici le résultat :




Jâai servi le chou braisĂ© en sauce avec des coquillettes complĂštes, mais on peut Ă©galement servir cela avec du riz par exemple, câest vraiment trĂšs bon ! đ
Et dâailleurs, jâai ajoutĂ© un peu de sauce sriracha pour avoir une petite touche piquante et jâai adorĂ© ! đ
Câest un plat rĂ©confortant, qui se mange bien bien chaud !
Bref, jâespĂšre que cette recette vous aura donnĂ© envie de tester le chou frisĂ© (chou de Milan) en sauce.
