Power Breakfast Spread for Healthier Breakfast / 健康的な朝ご飯のためのPower Breakfast Spread
In Germany, it's common to enjoy bread with various spreads like chocolate, butter, jam, and honey for breakfast. While German bread is delicious, and a sweet breakfast has its charm, I've found myself wanting something a bit different, especially from a nutritional perspective. I also try to avoid spiking my blood sugar first thing in the morning. Over the years, I've experimented with different breakfast ideas, from seasonal vegetable open sandwiches to hot sandwiches and even natto rice.
Recently, after making mooncakes, I had some leftover filling and decided to spread it on my bread. I’ve always loved the combination of sweet bean paste and bread—like the famous An Butter bread from Kimuraya in Ginza. Unsurprisingly, it was delicious.
This particular filling is made from azuki beans, dried fruits, nuts, black sesame paste, and sesame oil, without any added sugar. Unlike typical spreads, it contains no refined sugar, and it's packed with good-quality proteins and fats, making it feel like a healthier choice.
To make this spread, I blend 50g of azuki beans I cooked without suger, 30g of dried fruits, 15g of nuts, and 15g of black sesame paste. The base is azuki beans, but the nuts and dried fruits vary depending on what I have in the kitchen at the time.
I even baked a loaf of bread specifically for this spread 😁. I slathered it with butter and then added the bean paste on top. The result was fantastic.
The only issue is that the mooncake filling is a bit too thick to spread easily on bread. This got me thinking: could I create a spread that's not only healthy and nutritious but also easy to spread, like a "Power Breakfast Spread"? When I think of a sweet bean spread, Toraya's An Paste comes to mind, but I’d like to focus even more on nutritional benefits.
Although I'm still in the trial phase, and the taste is good, I think it could be even better if it were smoother and easier to spread. I'm considering options like adding a bit of agave syrup, which has a lower glycemic index, or increasing the oil content slightly. However, I want to avoid adding water to maintain the shelf life. I might also need a more powerful blender or a sieve to achieve a smoother texture.
This year, due to a poor shiso harvest, I won’t be producing shiso syrup as usual. Instead, I’m toying with the idea of bringing my Power Breakfast Spread to market. Who knows, it might make its debut at the local market soon!
ドイツでは、朝ご飯にパン、チョコレートスプレッド、バター、ジャム、蜂蜜などを塗って食べることが多いです。ドイツのパンはおいしいし、甘い朝ご飯もよいのですが、毎日だとちょっと変化がほしくなり、栄養面が気になります。朝から血糖値をがっつり上げてしまうのも避けたいです。これは長年の課題で、季節の野菜のオープンサンド、ホットサンド、納豆ご飯など、あれこれ工夫をしています。
先日、月餅を作ったときに、餡が少しだけ残り、パンに塗ってみました。あんぱんの老舗、銀座・木村屋のあんバターというパンが大好きで、あんことパン(さらにバター!)の組み合わせはおいしいとは思っていましたが、やっぱりおいしい。
この餡は、砂糖を加えずに煮た小豆、ドライフルーツ、ナッツ、黒ごまペースト、ごま油を使って作ります。一般的なスプレッドとは違っていわゆる白砂糖が入っていなくて、良質なタンパク質や油を使っているので、体にいい気もします。
小豆50g、ドライフルーツ30g、ナッツ15g、黒胡麻ペースト15gをブレンダーにかけて作ります。ベースは小豆で、ナッツやドライフルーツはその時々、台所にあるものを使っています。
このためだけに食パンを焼きました 😁 バターをたっぷり塗って、あんをt塗って完成。
月餅の餡はパンに塗るには少し硬くて塗りにくいなので、もう少しパンに塗りやすくして、健康的で栄養価が高く、なおかつおいしい「Power Breakfast Spread」のような商品を作れないかと考え始めました。あんこのスプレッドと言えば、虎屋のあんペーストがおいしいのですが、もうちょっと栄養面にフォーカスする感じでしょうか。
まだ試作段階で、味はいいものの、もう少しやわらかくなめらかにするとさらによさそうです。水を加えてしまうと保存性が落ちそうで、血糖値の上がりにくいアガベシロップを使う、もう少しだけ油分を増やすなどが考えられます。なめらかにするにはより強力なブレンダーや漉し器も必要なのかもしれません。
今年は紫蘇が不作で紫蘇シロップの生産はお休みになりそうです。代わりにPower Breakfast Spreadを商品化して、マーケットでお披露目したいななんて考えています。
